Extra Crispy Batter Fried Fish with Homemade Tartar Sauce

Ingredients for Fish (Serves 4)

  • ½ Cup all purpose flour
  • ½ Tbsp. baking powder
  • ½ tsp. salt
  • ½ Cup cold water
  • 1½ lbs. firm white fish fillets, each cut into 2 or 3 pieces (corvina, dorado, etc)
  • Oil for deep frying 

Directions

  1. Mix together flour, baking powder, salt & water.
  2. Refrigerate for 20 minutes.
  3. Heat the oil to exactly 350F. If the temperature is lower the fish will end up greasy. If it’s higher the batter may burn.
  4. Dip the fish into the batter to coat & gently drop into the hot oil. Fry 2 or 3 pieces at a time & don’t over-crowd. Make sure you let the oil return to 350F before cooking a second batch.
  5. Wait for the fish to float to the surface & depending on the thickness of the fish, fry for 1 – 2 minutes each side, until the batter is crispy & golden.
  6. Drain well on paper towels. 

This batter also makes great onion rings.

Ingredients for Tartar Sauce

  • ½ tsp. onion, finely chopped
  • 1 tsp. capers, rinsed & finely chopped
  • 2 tsp. sweet pickle, finely chopped
  • ½ Tbsp. parsley, finely chopped
  • 1 tsp. green olives, rinsed & finely chopped
  • 3 Tbsp. mayo
  • 3 Tbsp. sour cream
  • ½ Tbsp. wine or cider vinegar

Directions

Mix all ingredients in a small bowl.
