Extra Crispy Batter Fried Fish with Homemade Tartar Sauce
Ingredients for Fish (Serves 4)
- ½ Cup all purpose flour
- ½ Tbsp. baking powder
- ½ tsp. salt
- ½ Cup cold water
- 1½ lbs. firm white fish fillets, each cut into 2 or 3 pieces (corvina, dorado, etc)
- Oil for deep frying
Directions
- Mix together flour, baking powder, salt & water.
- Refrigerate for 20 minutes.
- Heat the oil to exactly 350F. If the temperature is lower the fish will end up greasy. If it’s higher the batter may burn.
- Dip the fish into the batter to coat & gently drop into the hot oil. Fry 2 or 3 pieces at a time & don’t over-crowd. Make sure you let the oil return to 350F before cooking a second batch.
- Wait for the fish to float to the surface & depending on the thickness of the fish, fry for 1 – 2 minutes each side, until the batter is crispy & golden.
- Drain well on paper towels.
This batter also makes great onion rings.
